The Original San Antonio "Chili Queens" Recipe
Ingredients:

The Meat: 1kg beef chuck (or bottom round/bollar) and 500g pork shoulder. Note: Keep the fat.

The Render: 1/3 cup lard (pork fat) and 1/3 cup suet (beef kidney fat).

The Aromatics: 3 medium onions, large-diced.

The Liquid: 1.5 litres of water (or a 50/50 mix with peeled tomatoes if you insist on the modern tweak).

The "Simmerin' Sack" Components: * Dried Ancho, New Mexico, and Pequin chiles (remove stems/seeds).

Garlic flakes, toasted cumin seed, toasted coriander seed, black pepper, celery seed, and bay leaf.

The Finish: Corn Tortilla Masa, Mexican Oregano, chives, and sage.
The Method

Render the Fat: Cut the meat. If there are any big pieces of fat or rind, toss them into a cold pot and bring to medium heat until the fat renders out. Use this as your cooking fat.

Sear: Brown your meat in the rendered lard and suet in small batches. Don't crowd the pan. Once browned, add your onions and sauté until translucent.

The Initial Simmer: Add your water (or water/tomato mix) and the Simmerin' Sack spices. Bring to a boil, then immediately drop to a low, lazy simmer. Cover and set your timer for 2 hours.

The Chile Paste: While the meat is simmering, take your dried chiles.

Optional: Give them a quick flash in a hot pan until aromatic (don't burn them).

Soak them in a bowl of the hot cooking liquid from the pot until soft.

Puree the chiles into a smooth paste.

Add this paste and the whole Pequin "fireballs" into the main pot.

The Final Bind: Once the meat is fork-tender, whisk in the Finishing Pack (Masa, Oregano, Chive, Sage). Bring it back to a gentle boil just long enough to thicken the sauce to a rich, glossy gravy.
Service
Serve it in a bowl. No frills. If you’re being a purist, a piece of plain bread is all you need to mop up the bottom of the bowl.

I've tried all kinds of recipes and variations for Chile con Carne and this one beats them all. Add some beans and cornbread and get ready for a treat!

Life-long Chili con Carne fan and extremely amateur home cook. Been wanting to experiment with genuine chiles but didn’t know where to start. Was careful in trying this pack for the first time, following the recipe but didn’t add the pequins as I wanted the gauge the intensity of the bigger chiles. Slow-cooked all the ingredients for several hours until the cubed meat shredded. At that stage, it was spicy enough so I hesitated to add the Finishin’ Pack. However, left the pot to “season” on the stove overnight and found the flavours had mellowed considerably so added the Finishin’ Pack but still left out the pequins. The Chili con Carne was outstanding, certainly up there with those I’ve had on road trips through the south-west US. Immediately ordered two more Chili con Carne Kits; next time, I’ll add the pequins for extra punch. Only variation was a can of red kidney beans. I like beans in my Chili.
Easy to follow instructions, came out a treat.
I do like this kit, it makes a nice chilli once you tweak it a bit. My first use I followed the (somewhat vague) directions and, up until the last step, seemed to be going OK. However, the finishing pack had something in it which I personally disliked. I cannot put my finger on exactly what it was. But the dish did not improve with the addition of this bag, it went backwards. Personal opinion, obviously. My second attempt, I sieved the finishing pack to remove the larger particles. I did think it may have had coriander leaf, which I am not a huge fan of, as you can see green leafy particles in it. This mostly worked on those bits and also removed a significant amount of what appear to be small flower buds along with other items. The other spices and finer particles went into the dish and this seems to have worked, a much better result, I would like to see the 'holy trinity' of whole dried chillies supplied - ancho, guajillo, and pasillas, for the sauce base. Will buy again, and continue tweaking to see what else can be done.

Our 1–10 heat scale maps to SHU ranges: level 1 (Mild) covers everyday table sauces under ~5,000 SHU; level 5 (Solid Heat) is around habanero range (~100,000–350,000 SHU); level 10 (Super Hot) covers extreme extracts like Mad Dog Plutonium at 9,350,000 SHU.
