This Maseca Masa-Harina is mainly used to make masa, which is the maize mother dough Mexican use to make all sorts of deliciousness! from tortillas and sopes to huaraches, gorditas, quesadillas, empanadas, popusas, atoles and many, many other dishes. Don't confuse it with polenta or corn flour, or any other type of corn made flour, this is special.
The maize has been cooked in an ancient process call nixtamalization, which basically soaks the kernels in an alkaline solution made of limestone and water, that makes the kernels easier to ground and much more nutritious, plus it gives the flour its gorgeous earthy taste so characteristic of corn tortillas.
Please note: the difference is between this masa-harina and the one we stock in 1.8 kilo bags is that the 1kg bag presentation is made for the Mexican market, where masa is consume far quicker than in any other country. There are two best before dates on the pack. One will show March/April or May 2024 and while it is confusing, these packs have been updated by Maseca prior to shipping to now reflect a November 2024 best before date. If this is of any concern to you, please consider a different product.
This Maseca Masa-Harina comes in 1 kilo bags and it is naturally Gluten Free, made with 100% natural corn, with no preservatives added, no cholesterol and no trans fats, although sadly, it does contain GMOs. The flour is also good for baking and as a thickening agent for those with Coeliac or wheat intolerance.
