Cuitlacoche or huitlacoche tastes like a cross between corn and mushrooms. Uniquely Mexican, cuitlacoche is the result of corn which has been inoculated with funghi. It changes corn kernel, turning it a black-purple colour and enlarging and softening it. It's kinda ugly but incredibly delicious.
Try it in a corn & zucchini omelet, Tacos, Chicken Breast stuffed with huitlacoche, pasta with a huitlacoche sauce, Crepes with huitlacoche stuffing and white sauce.
For an easy taco filling, saute with sliced zucchini, small diced onion and a sprinkle of epasote. So Mexican, so vegan, so yummy.
Huitlacoche is also called Mexican truffles.
