This sauce is the pinnancle of balanced flavour and heat in the Sabarac line up.
With a minimum content of 65% Carolina Reapers, it is only for the serious chilli-head!
Ingredients: Carolina Reaper, Onion, Garlic, Rice Malt Syrup, White Wine Vinegar, Salt.
Initially, I couldn't find the right food to pair this with. In curries and chili, it provided heat but the flavour I knew was there (from an initial tasting) wasn't coming through. That all changed when I tried it with steak. All of the bite and spice really came to the fore. You could a kick of heat (a lot of lingering heat) but the other components were given a chance to come through. It really enhanced the flavour of the steak and provided a great mix of salt and garlic and that bit of brutal sweetness you get from Carolina Reaper. Have tried it with a few steaks now and medium-rare has been the best for me. It's a bit like a side order of mustard - something that really blends well with the meat but gives everything a chance to contribute.
There is seriously nothing else on the market like this. Others have terrifying names and claims to be extra hot and they come nowhere near this sauce. A few drops is all you need to give a nice clean heat, that doesn't distract too much from the flavours of the dish, while giving it real punch. I also add to bone broth for a nice spicy drink.
