Pasilla means 'little raisin' which refers not only to its dark wrinkled skin but also its flavour when dried has dried fruity overtones.
This is a mild pepper which is used fresh in enchilada sauce or salsas. When dried it is used in a wide range of Mexican dishes.
Long narrow pods are very mild with a sweet flavor when fresh, and a rich smoky flavor when dried. Tall plants produce dark green chiles that turn dark brown when mature.
