Add to gumbos and soups after they are cooked, just before serving. Filé will thicken and add a very delicate flavor to any gumbo or soup on which it is sprinkled.
Add a little Zatarain's Filé ('fee-lay') to gumbo to enhance your favorite gumbo dish.
Filé was first used by the Choctaw Indians and is actually ground leaves from the sassafras tree.
