Ingredients: cacao, chilli, rice, garlic, onion, honey, sugar, vinegar,almond, raisins, orange, lime juice, spices, salt.
Jungle Rain's "Aztec Chocolate Fire" Braised Lamb
1kg lamb forequarters
50g diced pancetta
1 litre vegetable stock
400g can of diced tomatoes
200ml red wine
200g chopped carrots
200g chopped celery
150g finely chopped onions
10g garlic finely sliced
1 bottle "Aztec Chocolate Fire"
1 bay leaf
1 sprig rosemary
1 sprig thyme
add extra fresh chilli or chilli powder for heat tolerance
Marinate lamb in JungleRain's "Aztec Chocolate Fire" for a few hours
Add all remaining ingredients and to bring to boil
Reduce heat and simmer for 1 hour until liquid is reduced by about half
Remove sprigs of Rosmery, Thyme and Basil and .....
Serve on a bed of steamed rice.
