While not to be taken as an exhaustive treatise on the subject, iIf you're looking for a cooks handbook of chiles, this is a good one. Mark Miller of the famous Coyote Cafe is a cook, and the approach of this book is from a culinary perspective. He gives a brief rundown on each chile with excellent pictures, some advice on use and possible substitutions with some recipes. He includes all types of peppers from around the world and this book is not limited to the Latin American varieties.
